The very sight of this sitting in the fridge makes kids hungry. It can easily be assembled a day earlier and watching kids enjoy this is so rewarding.

Holiday Recipe 1- Double Layered Cheese Cake Sandwich
Vacations are a challenging time for parents, especially for working couples as children tend to always be hungry and gorge on unhealthy stuff. However, if we parents manage to keep some ingredients ready, there are some quick treats that can be assembled by the kids themselves, boosting their creativity and giving them time away from their world of electronics.
If your children are too young, you can always assemble the treat and keep it in the fridge so that they can have it. This way you know your child eats healthy and on time.
That being said, a whiff of a particular aroma still manages to remind us of holiday time, of summer, when our grannies used to cook up everyday treats. Due to nuclear families, this is not always possible. So, lets give our children the same sort of memories so twenty years down the line they can reminisce about their holidays too!

Bitter Melon(Karela) Stir- Fried with Tomatoes ( korola prothom paate )
Bengalis usually begin their meals with something bitter. This preparation is generally made in most bengali households using potatoes. However, keeping in mind the benefits of this vegetable for diabetics, I have been cooking without potatoes for years . The ratio of the karela and tomatoes is 1:1. If you are using a large size karela use a large size tomato and likewise for either medium or small .

Chicken schnitzel – With my own twist
An Austrian delicacy passed slowly to many countries is a total delight. To complete the platter I usually make a batch of roast potato wedges.

Mixed vegetable
A colourful blend of vegetables to go with rotis (Indian flat bread) . You can use any combination of veggies . I happened to cook this on a day when I wanted to clear my fridge of all the remaining veggies .It turned out pretty well .
