Chicken Biryani

This is my easy biryani recipe and has always been a favourite with my guests. I marinate the chicken with all the required ingredients and leave it overnight in the fridge but it works well even if it is marinated for an hour. The more the merrier though.If I have too many items to cook, then I make the rice beforehand and keep. But, freshly cooked one is always the best. I use either chicken thighs or chicken legs to ensure uniformity in cooking time.

TomaCoco Chicken

This chicken recipe is a marriage of homemade tangy tomato paste and naturally sweet coconut milk. Today I have two recipes to share, namely a very essential paste made with tomatoes and garlic which sits in my fridge and freezer yearlong and a chicken recipe made by using the paste. Chicken Liver with Caramelised Onions

Chicken liver is the store-house of vitamins, minerals, iron, magnesium and phosphorus but it is very high in cholesterol. In olden days, doctors advised patients with anemia and vitamin B 12  deficiency, to include liver in their diet everyday. It is good to have liver once in a while even for people who have high cholesterol. This particular recipe is inspired by Mediterranean cuisine. It is very easy to make and the best part is,  all preparations can be made beforehand  and can be sauteed and assembled just before serving.

Easy Peasy Macaroni

Holidays are almost over and if you’ve fallen short of new recipes, this is the one.

It is not necessary that you put in all the ingredients that I used in this recipe. For non vegetarians the choices are unlimitedvegetarians can make this by just avoiding sausages. I put veggies and soya chunks to make it a complete meal. This can be made ahead and children at home can have it when they feel hungry.

Holiday Recipe 1- Double Layered Cheese Cake Sandwich

Vacations are a challenging time for parents, especially for working couples as children tend to always be hungry and gorge on unhealthy stuff. However, if we parents manage to keep some ingredients ready, there are some quick treats that can be assembled by the kids themselves, boosting their creativity and giving them time away from their world of electronics.

If your children are too young, you can always assemble the treat and keep it in the fridge so that they can have it. This way you know your child eats healthy and on time.

That being said, a whiff of a particular aroma still manages to remind us of holiday time, of summer, when our grannies used to cook up everyday treats. Due to nuclear families, this is not always possible. So, lets give our children the same sort of memories so twenty years down the line they can reminisce about their holidays too!
