Potato halwa

This is a very simple sweet dish usually made on days when people observe a fast. It provides a high dose of carbohydrate kick.

Makes 8 brownie size squares


  1. Medium potatoes                -6
  2. Sugar                                       -6 tbsps
  3. Milk                                         -2 tbsps
  4. Ghee                                        -2 tbsps
  5. Saffron strands                    -8
  6. Cardamom powder             -1/4 tsp
  7. Pistachios                              -12
  8. Fresh rose petals                 -12


  1. Boil the potatoes. Peel them and grate to ensure uniformity.
  2. Keep the grated potatoes in a bowl.
  3. Add sugar,ghee and saffron strands soaked in warm milk. Add the milk also. Mix well.
  4. Take a non -stick frying pan. Heat and add the potato mix.
  5. Fry till ghee seperates from the sides.
  6. Add slivers of soaked pistachios, finely shredded rose petals and cardamom powder.
  7. Fry till everthing comes together.
  8. Transfer to a greased shallow rectangular mould and let it set.
  9. Keep it at room temperature.Cut into squares and serve.
