By this series, I dont intend to impose that the following ingredients are a necessity in your fridge. It simply explains that if you do happen to have these ingredients, these are the recipies you can whip up. Now onto the post.
Today’s ingredients are
- Hung Curd
- Seasonal fruits of your choice – Diced
- Spiral pasta – Boiled fusilli pasta
- Pesto
- Cheese – any of your choice
Pasta in Pesto sauce is adored by my daughters’ friends and you’ll have to fight tooth and nail for a taste if they’re around.
Blend a bunch of basil leaves, 8 to 10 toasted pine nuts, 5 to 6 cloves of garlic, 2 tsps of extra virgin olive oil and 2 tsps of grated parmesan cheese (or whichever is readily available) and add a bit of salt. Store in a container in the fridge. Lasts upto a week or so.
To make Pasta in Pesto sauce (serves 2)
To a tsp of extra virgin olive oil in a wok,add a tsp of finely chopped garlic and one grated medium sized tomato. Cook till the oil separates from the sides. Then, add boiled pasta to it. Stir till everything gets coated. Then add one tbsp of pesto sauce and stir. Add parmesan cheese and serve.
To make fruit salad in hung curd
Beat hung curd gently with a fork. Add two tbsps of honey. Then add fruits, cut as per your taste and choice. Mix them well and serve cold.
